Cultivation Process
It takes a coffee plant at least 3 to 4 years to mature and bear fruit, depending on the climate.
This is a mature coffee plant bearing fruit.
Only ripe coffee cherries are picked to ensure high quality coffee in the end.
The coffee cherries are then placed in a container of water. The cherries that float are discarded. Those that remain on the bottom of the container are placed in the pulper machine.

The pulped beans are then fermented for 24 to 30 hours, depending on the climate. They are placed in a barrel that drains the coffee sap. After all the sap has been drained, the beans are washed twice, then are ready to be dried under the sun.
The drying process takes 8 to 9 days. During this process, the beans are turned at least 3 times a day to ensure even drying.
After 9 days of drying, the coffee beans are called pergamino. These beans still have shells which are removed by a husker machine.
This husker machine processes 100 lbs of pergamino beans per hour, yielding 75 to 80 lbs of green coffee.
The last step is to meticulously, hand select premium grade, green coffee beans from any defected beans. For 100 lbs of green coffee, this hand selection process takes about 4 days.
